Sayadieh  

(Fish & Rice) 

Yield: 4 number of servings 

Prep time: 1 hour 

Difficulty :  Medium  

Ingredients 

1 KG Sea Bass Fish  

Fish Spices/Marinade : 

1 tsp All Spice  

1 tsp Curry powder  

½ tsp Black Pepper  

¼ tsp Salt  

1 tsp Cumin 

1 tsp Tumeric  

1/3 cup freshly squeezed lemon  

¼ cup olive oil  

 

2 Medium Onions cut thinly  

1 cup Flour  (split in half ) 

1 cup Full Fat Milk  

¼ cup olive oil  

2 cup Basmati Rice  

Rice Spices : 

tbs Curry powder 

tbs Allspice 

½ tsp Black pepper  

¼ tsp salt  

1 tsp Tumeric   

2 Lumi (dried lemons) 

Fried pine nuts 

Fried almond 

Chopped parsley 

Directions 

  • Mix together the spices with the lemon and the olive oil  

  • Spread all over the fish ( inside and out) 

  • Marinate the fish for at least 1 hour.  

  • Then coat the fish with the flour.  

  • Fry in some heated olive oil just to get a crispy outer layer. Note: do not discard the oil.  

  • Lay the fish in a pan to finish cooking it in the oven.  

  • Soak the onions in the milk for an hour. 

  • Then dust with flour. 

  • Fry the onions in the same oil the fish was fried in.  

  • In a separate pot; add the rice and rice spices .  

  • Add water and cook the rice to tenderness 

  • Decorate with pine nuts, almonds and chopped parsley.  

  • Serve with Tahini Sauce.
